Cinco de Mayo Food and Traditions

Lots of people in the United States have heard of Cinco de Mayo. Some even look forward to celebrating it every year. Many, however, do not understand the history behind this Mexican holiday. If you ask the average American why Cinco de Mayo is celebrated, they will tell you it is Mexican Independence Day. They are wrong. That actually falls on September 16.

In the 1950s, the United States’ Good Neighbor Policy encouraged its people to reach out to neighboring lands. This is when Americans were introduced to Cinco de Mayo. In the ’60s, the holiday was pushed further into the public eye by Chicano activists as a way to spark cultural pride amongst Mexican-Americans.

By the time the 1980s rolled around, the holiday had been slowly growing in notoriety. Throughout this decade’s commercialism, Cinco de Mayo had been advertised as an excellent holiday to devote to drinking alcoholic beverages from American companies. It is because of these companies that Cinco do Mayo had become mainstream in American culture, although the true meaning of it, to celebrate Mexico’s victory against the French in 1862, was diluted.

Becoming more of a mainstream holiday has exposed more Americans to the traditions of our Mexican neighbors. Their wonderful music, foods, and traditions have made their way into our lives. A large part of our society anticipates the Cinco de Mayo holiday each year.

Cinco de Mayo has become a wonderful reason to indulge ourselves with margaritas, nachos and all things Latino. You can get all dressed up in bright traditional clothing, grab some sombreros, throw a Mexican flag up on the wall, hang dried chilies around the house and just have fun. The schools teach about this holiday, so have your children share what they have learned and incorporate it all into your celebration.

People all over the country design huge parties for Cinco de Mayo. The Mexican population is not the only ones celebrating. All of our ethic groups have connected together with this fun holiday. Major cities all over the map celebrate Cinco de Mayo. There is Port Huron in Michigan, New York, Los Angeles and many more.

A Great Tasting Squash Soup Recipe

A few weeks back I visited my parents. They cooked my fiance and I a great slap up meal, three courses, the lot. The starter was particually good – squash soup. This was the first time I had ever tried squash soup so I asked my mother for the recipe. She was reluctant to give it to me at first because she knew I’d immediately publish it online (and guess what… she was right!)

This is the stuff you’ll need:

Three pounds of squash, two tablespoons of maple syrup, four cups of chicken stock (or vege stock if you prefer), two garlic cloves, a teaspoon of cinnamon, a large onion, three tablespoons butter and 1/4 teaspoon of salt and pepper

Firstly, we need to get the squash ready. Using a normal potato peeler, remove the skin. Then cut the squash in half and using a large spoon remove all the seeds from inside the squash. Now simply chop the squash up into fairly big pieces for later.

Now preheat a large pan to a medium heat. While the pan is heating slice and dice the onion and garlic. Add the butter to the pan and let is melt, coating the bottom of the pan. While the butter melts add the onion and cook for around five minutes. Next, throw in the cinnamon and garlic, and let the mixture cook for another 30 seconds. Finally, throw in the squash, add the stock, put the lid on the pan, and leave for a further 25 minutes.

After 25-30 minutes check the mixture – the butternut squash should now be well cooked. Now blend the mixture well, add some syrup for a treat, maybe add some cream (unless you’re on a diet) and blend some more. Make sure it’s nice and smooth before serving in separate dishes.

Sugar Cookies: Make Your Family Happy With These Treats

Sugar cookies have been a favorite of children and adults for years. The simplicity of taste and ease of making them enables them to be made even by those who are not expert cooks. It was a shame to let these little sugar cakes go in the trash so someone got the idea to sell them. French called them gimblettes and the Italians called them cimbellines.

On variety of sugar cookie is fluffy and light and they become quite tall while in the oven baking. There is a bit of crunch to the edge but the middles are soft and sweet. Another variety is made where the cookie is a little harder and crisp. Both are wonderfully sweet and tasty.

Many times sugar cookies are rolled out and cut with cookie cutters in to shapes. They are made for just about any holiday. On Valentine’s day they can be made into hearts. For Easter they can be cut out as bunnies or eggs. Halloween can be exemplified by sugar cookie pumpkins. Make turkey shaped cookies for Thanksgiving. Christmas sugar cookies can be in all kinds of shapes from Santa Claus to the Christmas stocking.

The following Soft Sugar Cookie recipe is made with confectioners’ sugar instead of granulated sugar. They come out soft and fluffy. Do not try to use cookie cutters with this recipe because the cookie is to soft to make them that way.

Turn your oven on to 350 degrees F. With an electric mixer cream 1 half pound of butter that has been softened and add 1 cup powdered sugar slowly. Include 1 egg, 1 teaspoon vanilla flavoring mixing it in well. In a separate bowl mix 2 cups of flour and 1 half teaspoon baking soda. Combine and gradually add to the egg mixture. Take a teaspoonful of dough and roll it into a 1 inch ball. Place on a cookie sheet that has been greased 2 inches apart. Using the tines of a fork press each ball down so it flattens. Leave in the oven for 6 minutes then let the cookies stay on the sheets for 5 more minutes. Take them off the sheet and place them on a rack to cool. If you desire you can sprinkle the top of the cookies with a little granulated sugar before baking.

The next recipe is a sugar cookie that is rolled flat and cut with cookie cutters. Using a large bowl take 1 and one half cups flour and sift it with two teaspoons of baking powder and 1 half teaspoon salt and place aside for later. In a bowl for the electric mixer place one cup butter and gradually add 1 and one half cups of granulated sugar. Beat until the mixture gets light and fluffy. In a small bowl beat 2 eggs. Add to the mixer with 1 tablespoon of milk and one teaspoon of vanilla. Slowly add 1 and a half additional flour until incorporated. The dough should not be stiff, but smooth so if it starts to stiffen stop adding the flour. Roll the entire bowl of dough into a ball and place it in wax paper to be placed in the refrigerator for a whole hour. Take out of the refrigerator and roll to about one fourth of an inch thick and use cookie cutters to cut out shapes. Sprinkle them with sugar or leave them alone to be decorated with colored icing after cooking. Put the shapes on non stick sprayed cookie sheets and bake in a 400 degree F oven for about 10 minutes or until the edges become lightly brown. Leave them on the cookie sheets for about 2 minutes then remove to a cooling rack.
